Before embarking on a Linux journey its always good to understand the context of the kernel, the desktop environment and package (applications) management. The kernel is the same (apart from different versions decided on my distros) and even desktop environments can be common across different distros eg. Cinnamon, KDE, GNOME.
For me the key difference is the package manager and how it works. It's the part that decides how stable update will be, whether you get bleeding edge versions or more stable versions, and how upgrades will happen. It is true that now we have Snap and AppImage you can install the same "application" package across any distro so in some sense this is making the package manager of the distro a little less obvious.
The article below gives an analogy of a vehicle to explain the context in simple to understand terms. Linux (distos) are all about freedom of choice, and if you still don't agree, then roll your own distro.
